3-Ingredient Samoa Cookies
A simple, delicious, and wholesome treat with all the flavors of classic Samoas—sweet, chewy, coconutty, and dipped in rich dark chocolate. The best part? No baking required!
Ingredients:
- 10 medjool dates – Make sure they are pitted and soaked to soften. This creates a naturally sweet, caramel-like base for the cookies.

Instructions:
1️⃣ Soak the Dates – Start by pitting your medjool dates and soaking them in warm water for a couple of minutes. This softens them, making them easier to blend into a smooth, sticky dough.
2️⃣ Blend the Dates – Place the softened dates in a food processor and blend until smooth. If needed, add a small splash of water to help everything mix evenly. Scrape down the sides occasionally to ensure a uniform texture. The result should be a thick, caramel-like paste.
3️⃣ Mix in the Coconut – Transfer the blended dates to a bowl and stir in the toasted coconut flakes. This step infuses the mixture with that signature Samoa flavor and adds a satisfying bite. Mix well until fully combined.
4️⃣ Shape the Cookies – Using your hands, roll the mixture into small balls and place them on a parchment-lined baking sheet. Gently press each ball with a spoon to flatten into a cookie shape.
5️⃣ Create the Signature Hole – To make them look like traditional Samoa cookies, poke a hole in the center of each cookie. You can use a glass straw, chopstick, or the end of a wooden spoon for this step.
6️⃣ Chill Before Dipping – Place the cookies in the freezer for at least 10–15 minutes. This helps them firm up, making the chocolate coating process easier.
7️⃣ Melt the Chocolate – While the cookies are chilling, melt your dark chocolate. You can do this using a double boiler or in short intervals in the microwave, stirring frequently to avoid burning.
8️⃣ Dip & Drizzle – Remove the cookies from the freezer. Dip the bottom of each cookie into the melted chocolate, allowing any excess to drip off. Then, drizzle additional melted chocolate over the tops for that classic Samoa look.
9️⃣ Final Freeze – Return the cookies to the freezer for another 30 minutes, allowing the chocolate to fully set.
