3-Ingredient Samoa Cookies

Instructions:

1๏ธโƒฃ Soak the Dates โ€“ Start by pitting your medjool dates and soaking them in warm water for a couple of minutes. This softens them, making them easier to blend into a smooth, sticky dough.

2๏ธโƒฃ Blend the Dates โ€“ Place the softened dates in a food processor and blend until smooth. If needed, add a small splash of water to help everything mix evenly. Scrape down the sides occasionally to ensure a uniform texture. The result should be a thick, caramel-like paste.

3๏ธโƒฃ Mix in the Coconut โ€“ Transfer the blended dates to a bowl and stir in the toasted coconut flakes. This step infuses the mixture with that signature Samoa flavor and adds a satisfying bite. Mix well until fully combined.

4๏ธโƒฃ Shape the Cookies โ€“ Using your hands, roll the mixture into small balls and place them on a parchment-lined baking sheet. Gently press each ball with a spoon to flatten into a cookie shape.
