If you’re craving a sweet treat that’s both easy to make and absolutely delicious, these no-bake 3-ingredient Samoa cookies are the perfect choice! They require minimal effort, no oven time, and deliver that rich, caramel-chocolate-coconut flavor we all love.
What You’ll Need:
✅ 10 Medjool dates, pitted and soaked
✅ 1 cup toasted coconut flakes
✅ Melted dark chocolate
How to Make These Easy No-Bake Samoa Cookies:
1️⃣ Prepare the Dates: Remove the pits from the Medjool dates and soak them in warm water for a few minutes. This will help soften them, making them easier to blend.
2️⃣ Blend the Base: In a food processor, blend the softened dates until you achieve a thick, smooth consistency. If needed, add a small amount of water to help the process along. Be sure to scrape down the sides as you blend.
3️⃣ Add Coconut: Stir in the toasted coconut flakes until well combined. This step gives your cookies that signature Samoa flavor!
4️⃣ Shape the Cookies: Roll the mixture into small balls and place them on a parchment-lined baking sheet. Using the back of a spoon, gently flatten each ball to create a cookie shape.
5️⃣ Create the Hole: Using a glass straw or the end of a small spoon, carefully poke a hole in the center of each cookie. This will give them the classic ring shape.
6️⃣ Chill While You Melt the Chocolate: Place the cookies in the freezer for about 15–20 minutes to firm up while you melt the dark chocolate. You can do this using a microwave in short intervals or over a double boiler for a smooth, glossy finish.
7️⃣ Dip & Drizzle: Remove the cookies from the freezer and dip the bottom of each one into the melted chocolate. For extra indulgence, drizzle some additional chocolate over the top.
8️⃣ Final Freeze & Enjoy: Return the cookies to the freezer for about 30 minutes to allow the chocolate to set. Once firm, they are ready to enjoy!
These no-bake Samoa-inspired cookies are the perfect guilt-free treat, packed with natural sweetness from the dates and a rich coconut-chocolate flavor. Try them out and let us know how they turn out!
