4-Ingredient Peppermint Patties โœจ

These homemade peppermint patties are a dreamโ€”refreshing, chocolatey, and completely plant-based! They have the perfect balance of cool peppermint and rich dark chocolate, plus theyโ€™re naturally sweetened. Whether you’re making them for a holiday treat, an after-dinner dessert, or just becauseโ€”you’re going to love how simple and satisfying they are!

โœจ What Youโ€™ll Need:

  • 3 cups Letโ€™s Do Organic Unsweetened Shredded Coconut by @edwardandsons (This brand is my favorite because the texture is just right, creating a smooth, creamy filling.)
  • 2-3 tbsp pure maple syrup (Start with 2 tbsp and add more if needed for the perfect sweetness.)
  • 1/2 tsp peppermint extract (A little goes a long way! Adjust to your preference for a stronger or milder minty flavor.)
  • Melted dark chocolate (Use your favorite high-quality dark chocolate for the best flavor. I love at least 70% cacao for a deep, rich taste!)

Instructions:

1๏ธโƒฃ Blend the Coconut: In a food processor or high-speed blender, pulse the shredded coconut until it begins to break down and stick together. This may take a couple of minutesโ€”scrape down the sides occasionally to ensure everything is well processed. The natural oils from the coconut will start to release, creating a soft, dough-like texture.

2๏ธโƒฃ Sweeten & Flavor: Add in the maple syrup and peppermint extract. Continue blending until the mixture becomes smooth and holds together when pressed between your fingers. If it feels too dry, add an extra drizzle of maple syrup or a tiny bit of coconut oil to help bind it.

3๏ธโƒฃ Shape the Patties: Scoop out small portions of the mixture and roll them into balls, then flatten them gently into discs. Place them on a baking sheet lined with parchment paper or a silicone mat to prevent sticking.

4๏ธโƒฃ Chill to Set: Transfer the baking sheet to the freezer and let the patties firm up for about 15 minutes. This step is key to keeping them from falling apart when dipping in chocolate!

5๏ธโƒฃ Melt the Chocolate: While the patties chill, melt your dark chocolate. You can do this using a double boiler or in the microwave in short 15-second bursts, stirring between each, until smooth and glossy. For an extra silky finish, you can stir in ยฝ teaspoon of coconut oilโ€”this helps the chocolate set beautifully!

6๏ธโƒฃ Dip & Coat: Remove the patties from the freezer and dip each one into the melted chocolate, using a fork to lift them out. Let the excess chocolate drip off before placing them back onto the parchment-lined sheet. Make sure they are fully coated for that luscious chocolate shell!

7๏ธโƒฃ Final Chill: Return the coated patties to the freezer for another 10-15 minutes, or until the chocolate is fully set.

8๏ธโƒฃ Enjoy! Once firm, take a bite into that crisp chocolate shell and creamy, refreshing coconut-mint center. Store any leftovers in an airtight container in the fridge for up to a week or in the freezer for a longer-lasting treat!

Pro Tip: If you want to make them extra fancy, drizzle some melted white chocolate on top or sprinkle a little flaky sea salt before the chocolate sets.

Let me know if you try these! โœจ
