5-INGREDIENT BLUEBERRY BREAKFAST COOKIES

These delightful blueberry breakfast cookies are my absolute favorite! Not only are they super easy to make, but they’re also packed with wholesome ingredients that will fuel your morning. Plus, your kitchen will be filled with the sweet and comforting aroma of cinnamon and baked oats—an irresistible way to start the day!

What You’ll Need:

  • 1 ripe banana (mashed until smooth; the riper, the sweeter!)
  • ¼ cup raw almond butter (or any nut butter of your choice—cashew, peanut, or even sunflower seed butter for a nut-free version)
  • 1 teaspoon ground cinnamon (adds warmth and depth of flavor)
  • 1 cup sprouted oats (for a chewy, hearty texture—regular oats work too!)
  • ½ cup fresh blueberries (bursting with juicy sweetness; frozen can also be used, but don’t thaw them beforehand!)

Instructions:

1️⃣ Prepare the wet ingredients: In a small mixing bowl, mash the ripe banana with a fork until it reaches a smooth consistency. Stir in the almond butter and cinnamon, making sure everything is well combined. This mixture will act as the natural binder for the cookies, keeping them soft and delicious.

2️⃣ Add the oats: Gently stir in the sprouted oats until they are evenly coated with the banana and nut butter mixture. The oats will help give the cookies structure while adding a lovely chewiness.

3️⃣ Fold in the blueberries: Carefully fold in the fresh blueberries, being mindful not to crush them too much. Their natural sweetness will burst as they bake, creating pockets of juicy goodness in every bite!

4️⃣ Chill the dough: Place the bowl in the refrigerator for about 10 minutes to allow the mixture to firm up. This step makes scooping and shaping the cookies much easier!

5️⃣ Shape the cookies: Using a spoon or a small cookie scoop, drop portions of the dough onto a parchment-lined baking sheet. Gently flatten each mound with the back of a spoon or your fingers. This batch should make about six generously sized cookies.

6️⃣ Bake to perfection: Preheat your oven to 400°F (200°C). Bake the cookies for 12 minutes, or until they are lightly golden on the edges and slightly firm to the touch. Keep an eye on them, as baking times may vary slightly depending on your oven!
