This Chocolate Chip Pumpkin Bread is my go-to homemade version of the pumpkin loaf I used to love from Starbucks—but with a healthier twist! It’s soft, moist, packed with warm spices, and naturally sweetened, making it a perfect guilt-free indulgence. Plus, it’s gluten-free and easy to make with simple ingredients you probably already have in your kitchen!
Ingredients You’ll Need:
- 2 cups gluten-free rolled oats (for a wholesome, fiber-rich base)
- 1 cup pumpkin puree (for moisture and that delicious fall flavor)
- 1 tbsp pumpkin spice (feel free to add more for a stronger spice kick!)
- 4 eggs (or flax eggs for a vegan option)
- 1/3 cup milk of choice (I used almond milk, but any works!)
- 1 tsp baking soda (to help the bread rise)

Instructions:
