Ingredients

  • 1 cup low-fat greek yogurt
    1/2 cup chocolate protein powder
    2 tbsp maple syrup
    2 tbsp cocoa powder
    1/2 tbsp vanilla bean paste or extract

    filling
    1/4 cup peanut butter
    1 tbsp maple syrup
    topping
    3/4 cup dark chocolate chips, melted

Directions

  • in a bowl, mix greek yogurt, chocolate protein powder, maple syrup, cocoa powder, and vanilla until smooth.
  • with slightly wet hands, divide the mixture into 5 portions and shape into pops, making a small divet in the center of each.
  • in a separate bowl, stir together peanut butter and maple syrup until smooth. fill each divet with 1 tbsp of the peanut butter mixture, then insert a popsicle stick.
  • place the pops on a parchment-lined tray and freeze for several hours until firm. once frozen, dip each pop in melted dark chocolate, ensuring an even coat.
