BROWNIE BAKED OATMEAL
If I’m craving a brownie but want something a little more nourishing, this baked oatmeal is my go-to! It’s soft, moist, rich in chocolate flavor, and seriously satisfying. The best part? It’s made with wholesome ingredients that will keep you feeling great! Plus, you can prep it in advance and save the rest for later (if it doesn’t disappear before then ).
✨ What makes this so good?
This baked oatmeal has all the decadence of a fudgy brownie but with the goodness of oats, flaxseed, and natural sweeteners. It’s perfect for breakfast, a snack, or even dessert. You can eat it warm straight from the oven or chilled from the fridge—it’s delicious either way!
Ingredients:
Wet Ingredients:
- 2 cups milk of choice (almond, oat, soy, or regular milk all work well)
- ½ cup maple syrup (or raw honey for a slightly different sweetness)
- 1/3 cup nut butter of choice (almond, peanut, or cashew butter adds creaminess)
- 1 tsp vanilla extract (adds warmth and enhances the chocolate flavor)
Dry Ingredients:
- 2 cups rolled oats (I used gluten-free, but any rolled oats work)
- ¼ cup cacao powder (or cocoa powder for a deep, rich chocolate taste)
- 1 tsp baking powder (helps with texture and lightness)
- 1 tbsp flaxseed (or chia seeds, for added fiber and nutrients)
- A pinch of salt (balances the sweetness and enhances flavor)
- 1/3 cup dark chocolate chips (because more chocolate is always a good idea!)
Instructions:
1️⃣ Mix the wet ingredients: In a large mixing bowl, whisk together the milk, maple syrup (or honey), nut butter, and vanilla extract until smooth and well combined.
2️⃣ Add the dry ingredients: Stir in the rolled oats, cacao powder, baking powder, flaxseed, and salt. Mix everything together until the batter is evenly combined and there are no lumps.
3️⃣ Fold in the chocolate chips: Gently stir in the dark chocolate chips, making sure they’re distributed throughout the batter for chocolatey goodness in every bite.
4️⃣ Pour and prepare: Grease an 8” x 8” baking dish (or line it with parchment paper for easy removal), then pour the batter in, spreading it evenly. If you want extra indulgence, sprinkle a few more chocolate chips on top!
5️⃣ Bake to perfection: Place the dish in a preheated oven at 350°F (175°C) for 45 minutes, or until the edges are set and the center is slightly firm. The aroma of warm chocolate and oats will fill your kitchen!
6️⃣ Cool and enjoy: Let the baked oatmeal cool for at least 10 minutes before slicing. It’ll be soft and fudgy when warm, or slightly firmer once fully cooled. Enjoy as-is, or drizzle with a little nut butter or extra maple syrup for a treat! ❤️
Storage & Reheating Tips:
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Reheat in the microwave for 30-45 seconds for a warm, gooey texture.
- Want to freeze it? Wrap individual portions and freeze for up to 2 months. Just thaw overnight in the fridge or microwave before eating.
Pro Tip: Serve with a dollop of Greek yogurt, fresh berries, or a drizzle of peanut butter for an extra delicious twist!
Enjoy every bite of this brownie-inspired baked oatmeal! ✨
