LEMON BLUEBERRY TRUFFLES

Raw Cake Ingredients:

โœ”๏ธ 1 cup walnuts
โœ”๏ธ 1 cup dates
โœ”๏ธ 3 tbsp gluten-free rolled oats
โœ”๏ธ 2 tbsp shredded coconut
โœ”๏ธ 1 tbsp chia seeds
โœ”๏ธ 1 lemon, juiced

Luscious Frosting Ingredients:

โœ”๏ธ 1 cup cashews (soaked for about 30 minutes)
โœ”๏ธ ยฝ cup coconut oil, melted and cooled
โœ”๏ธ 3 tbsp raw honey
โœ”๏ธ 1 tsp vanilla extract
โœ”๏ธ 1 lemon, juiced
โœ”๏ธ 2-3 tbsp warm water (as needed for blending)

How to Make These Irresistible Truffles:

1๏ธโƒฃ Blend the truffle mixture: Add all the raw cake ingredients to a food processor and blend until the mixture becomes firm and sticky.
2๏ธโƒฃ Shape into truffles: Roll the mixture into bite-sized balls and place them on a lined baking sheet. Pop them into the freezer to chill while preparing the frosting.
3๏ธโƒฃ Make the creamy frosting: In a high-speed blender, blend all the frosting ingredients until smooth and creamy. If needed, add a little warm water to help with consistency.
4๏ธโƒฃ Coat the truffles: Dip each chilled truffle into the frosting, ensuring they are fully coated. Return them to the baking sheet.
