LEMON BLUEBERRY TRUFFLES
If you’ve been following me for a while, you know I have a soft spot for truffles. This time, I decided to experiment with a refreshing new flavor, and let me tell you—these Lemon Blueberry Truffles are an absolute winner! They’re incredibly soft, moist, and bursting with the natural sweetness of wild blueberries, perfectly balanced with a bright lemony zing. Plus, the creamy, melt-in-your-mouth frosting takes them to a whole new level of deliciousness.
Not only are these truffles gluten-free, naturally sweetened, and packed with wholesome ingredients, but they’re also super easy to make! Whether you’re looking for a quick snack, a healthy dessert, or an energy-boosting bite, these little treats are perfect for any occasion.
Raw Cake Ingredients:
✔️ 1 cup wild blueberries
✔️ 1 cup walnuts
✔️ 1 cup dates
✔️ 3 tbsp gluten-free rolled oats
✔️ 2 tbsp shredded coconut
✔️ 1 tbsp chia seeds
✔️ 1 lemon, juiced
Luscious Frosting Ingredients:
✔️ 1 cup cashews (soaked for about 30 minutes)
✔️ ½ cup coconut oil, melted and cooled
✔️ 3 tbsp raw honey
✔️ 1 tsp vanilla extract
✔️ 1 lemon, juiced
✔️ 2-3 tbsp warm water (as needed for blending)
How to Make These Irresistible Truffles:
1️⃣ Blend the truffle mixture: Add all the raw cake ingredients to a food processor and blend until the mixture becomes firm and sticky.
2️⃣ Shape into truffles: Roll the mixture into bite-sized balls and place them on a lined baking sheet. Pop them into the freezer to chill while preparing the frosting.
3️⃣ Make the creamy frosting: In a high-speed blender, blend all the frosting ingredients until smooth and creamy. If needed, add a little warm water to help with consistency.
4️⃣ Coat the truffles: Dip each chilled truffle into the frosting, ensuring they are fully coated. Return them to the baking sheet.
5️⃣ Garnish & chill: Sprinkle some fresh lemon zest on top for extra flavor, then freeze until firm.
6️⃣ Enjoy! These truffles taste best chilled, so keep them in the fridge or freezer until you’re ready to indulge!
