Soft & Chewy Peach Oatmeal Cookies (Gluten-Free Friendly!)
A fruity twist on classic oatmeal cookies – sweet, wholesome, and perfect for summer.

✅ Ingredients:

1 ½ cups rolled oats

¾ cup all-purpose flour (use gluten-free like @bobsredmill 1:1 if needed)

½ cup granulated sugar (coconut sugar works great!)

½ tsp baking powder

¾ cup diced fresh peaches
-
¼ cup milk (any plant-based milk – almond works well)

⅓ cup oil or melted butter (coconut oil adds a lovely touch)

1 egg
Optional Icing:

Powdered sugar + a few drops of water until drizzle consistency
Instructions:

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large mixing bowl, whisk together the milk, oil, and egg.

Add in the rolled oats, flour, sugar, and baking powder – stir until well combined.

Gently fold in the diced peaches.

Use a cookie scoop to portion out 12 cookies. Slightly flatten each with the back of a spoon.

Bake for 15 minutes, or until lightly golden.

(Optional) Once cooled, drizzle with a simple icing made from powdered sugar and water.
Pro Tips:

Use fresh, ripe peaches for best flavor. Canned peaches (well-drained) also work in a pinch.
