I’ve had so many requests for a lemon-flavored dessert, and this recipe turned out absolutely delicious. They’re buttery, zesty, naturally sweetened, and perfect for summer! The vanilla-infused glaze adds a light and refreshing touch, giving you just the right balance of sweetness in every bite.
These no-bake lemon truffles are gluten-free, dairy-free, and made with simple, real ingredients—perfect for a healthier snack or dessert. Plus, they’re incredibly easy to make!
Frosted Lemon Loaf Truffles Recipe
Raw Cake Ingredients:
✔️ 2 cups almond flour
✔️ ¾ cup oat flour
✔️ Zest of 2 lemons
✔️ Juice from 2 lemons
✔️ ½ cup raw honey (or pure maple syrup)
✔️ 1 tsp vanilla
Vanilla Glaze Ingredients:
✔️ 1 cup unsweetened applesauce
✔️ 3 tbsp pure maple syrup (or raw honey)
✔️ ½ cup coconut oil, melted and cooled
✔️ 1 tsp vanilla
✔️ Juice from 1 lemon (optional, for extra tang)
Instructions:
1️⃣ Prepare the truffle mixture: In a food processor, blend all the raw cake ingredients until the mixture sticks together and forms a dough-like consistency.
2️⃣ Shape the truffles: Roll the dough into bite-sized balls and place them on a parchment-lined baking sheet. Refrigerate while preparing the glaze.
3️⃣ Make the glaze: Blend all the glaze ingredients together until smooth and creamy.
4️⃣ Coat the truffles: Dip or drizzle each truffle with the vanilla glaze, ensuring an even coating. Place them back onto the baking sheet.
5️⃣ Add the finishing touch: Garnish with a sprinkle of fresh lemon zest for an extra citrusy kick.
