Ingredients
  

  • 2 lbs Yukon Gold potatoes cut into bite-sized cubes
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 yellow bell pepper chopped
  • 1 green bell pepper chopped
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 0.5 tsp chili powder
  • Salt and black pepper
  • 1 cup cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, pepper, and paprika on a baking tray. Roast for 20 minutes until lightly golden.
  2. Brown ground beef in a large skillet over medium heat and drain excess fat.
  3. Add diced onion, minced garlic, and colorful bell peppers to the skillet. Cook for 5–7 minutes until tender, then mix in seasonings.
  4. Combine roasted potatoes with the beef and pepper mixture, and spread evenly on the tray.
  5. Sprinkle shredded cheddar and mozzarella cheese generously over the top.
  6. Bake for another 10–15 minutes until the cheese is melted, bubbling, and golden.
  7. Garnish with fresh chopped parsley and serve warm.

Notes

Storage & Serving Tips:
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
