- Heat the oil in a large skillet or wok over medium-high heat until shimmering.
- Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Stir in the cooked chicken and heat for 2–3 minutes until warmed through and lightly golden.
- Add the cooked rice, breaking up any clumps with a spoon or spatula.
- Pour in the soy sauce and toss everything thoroughly to coat the rice evenly.
- Push the rice to one side of the skillet, crack the eggs into the empty side, and scramble until fully cooked before mixing them into the rice.
- Continue cooking for another 2–3 minutes, allowing the rice to sit untouched briefly between stirs to get extra crispy.
- Garnish with sliced green onions or sesame seeds and serve hot.
Notes
Always use day-old chilled rice to prevent clumping and achieve that perfect takeout-style crispy texture. Store leftovers in an airtight container in the fridge for up to 3 days.
