Ingredients
  

  • 2 cups cooked rice (preferably day-old)
  • 2 cups cooked chicken, diced or shredded
  • 4 gloves garlic, minced
  • 2 large eggs
  • 3 tbsp soy sauce
  • 2 tbsp cooking oil
  • Black pepper, to taste

Method
 

  1. Heat the oil in a large skillet or wok over medium-high heat until shimmering.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
  3. Stir in the cooked chicken and heat for 2–3 minutes until warmed through and lightly golden.
  4. Add the cooked rice, breaking up any clumps with a spoon or spatula.
  5. Pour in the soy sauce and toss everything thoroughly to coat the rice evenly.
  6. Push the rice to one side of the skillet, crack the eggs into the empty side, and scramble until fully cooked before mixing them into the rice.
  7. Continue cooking for another 2–3 minutes, allowing the rice to sit untouched briefly between stirs to get extra crispy.
  8. Garnish with sliced green onions or sesame seeds and serve hot.

Notes

Always use day-old chilled rice to prevent clumping and achieve that perfect takeout-style crispy texture. Store leftovers in an airtight container in the fridge for up to 3 days.
