  • 1 lb frozen meatballs
  • 1 lb baby potatoes, halved
  • 2 cups assorted veggies (like broccoli florets or sliced carrots)
  • 1/2 cup ranch dressing
  • 2 cups shredded cheese (cheddar, mozzarella, or your choice)

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Spread the halved baby potatoes and selected veggies evenly across a large sheet pan.
  3. Nestle the frozen meatballs onto the sheet pan among the vegetables.
  4. Drizzle the ranch dressing generously over the meatballs and veggies, tossing lightly if needed to coat.
  5. Sprinkle the shredded cheese evenly over the entire pan.
  6. Bake for 25–30 minutes, or until the meatballs are heated through, potatoes are tender, and the cheese is melted and bubbly.

Notes

For best results, space out the vegetables on the sheet pan so they roast rather than steam. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven or microwave.
