- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the shredded chicken, diced turkey bacon, sliced potato coins, and chopped onion.
- In a separate bowl, whisk together the cream, chicken broth, garlic powder, onion powder, salt, and pepper until combined.
- Transfer the chicken and potato mixture into the greased baking dish and pour the creamy sauce evenly over top, ensuring everything is well coated.
- Cover the baking dish tightly with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15–20 minutes, or until the potatoes are tender and the top turns lightly golden and bubbly.
- Let rest for 5–10 minutes, garnish with fresh parsley if desired, and serve warm.
Notes
For easy meal prep, you can slice the potatoes and cook/shred the chicken a day ahead. Store them separately in airtight containers in the refrigerator until ready to assemble.
